Vitamin Salad

Ingredients: Romaine (chopped), Red/yellow pepper (Ribbon cut), Celery (Ribbon cut), Onion (Ribbon cut), Cherry tomato (halved) or tomato slices, Cucumber (matchstick cuts), Orange (sliced), Basil, Cashew, Barberries, Flaxseed

Dressing: Olive oil, Tomato, Parsley, Onion, Lemon juice

*Blend all ingredients at high speed.


Cooking Instructions:

  1. Prepare vegetables as indicated on the list

  2. To prepare the dressing blend all the ingredients at a high speed

  3. Make a lettuce bed on a plate

  4. Place cucumber on the left half of the lettuce bed

  5. Place the mix of celery and pepper on the right half of the salad bed

  6. Distribute onion ribbons over the salad

  7. Place the tomato pieces on the top right corner of the plate

  8. Spread orange slices on the top left corner of the salad bed

  9. Sprinkle cashew over the centre line of the salad

  10. Garnish with basil at the centre

  11. Drizzle the dressing over the salad
