Summer Quinoa Salad
Ingredients: White quinoa, Apple, Purple yam, Zucchini, Strawberry, Olive oil, Coconut oil, Sea salt, Italian seasoning, Black pepper, Hemp seeds, Poppy seeds
Cook Quinoa (1:1 with water)
Dice yam, apple and zucchini.
Place the diced yam on a baking tray, drizzle with coconut oil and salt, and bake.
While the quinoa is still warm, add apple, baked yam, zucchini, olive oil, salt, Italian seasoning, and black pepper. Mix well.
Place on a plate and top with hemp seeds, strawberry and poppy seeds.
