Ingredients: Mixed lentils, Tomato, Zucchini, Red cabbage, Parsley, Pine nuts, Olive oil, Sea Salt, Mexican blend, Oregano, Garlic powder, Paprika, Cinnamon, Black pepper, Crushed chilli peppers (optional), Water
Soak the lentils for at least 2 hours, then cook.
Chop all the veggies.
Add tomatoes to a pot with some sea salt and olive oil and cook covered for about 15 minutes.
Take out about half of the cooked tomatoes and blend with water, then pour back into the pot.
Add lentils and all the seasonings to the pot with tomatoes. Cook for another 15 minutes.
Add zucchini, red cabbage and parsley, cover and turn off the stove. Remove from the stove after 5 minutes. This will allow the veggies to cook but stay fresh and crunchy.
Put on a plate and top with some pine nuts and chill pepper for some spiciness.
