Fermented Olives and Quinoa Salad

Ingredients: Mixed Quinoa, Carrot, Zucchini, Mixed Seeds, Parsley, Marinated Tofu( see our "Marinated Tofu"recipe for reference), Fermented Olives, Vegetable Seasoning, Olive Oil, Sea Salt, Black Pepper

Cooking Instructions:

  1. Cook quinoa (1:1 with water)

  2. Season carrots and zucchini with sea salt, black pepper and olive oil, and bake until tender.

  3. Chop the marinated tofu.

  4. Once everything is cooked, add the vegetables, seeds, olive oil, salt, parsley and vegetable seasoning to the quinoa and mix well. Taste and adjust the flavor if needed.

  5. Top with tofu and fermented olives, and serve!
