Couscous & Assorted Veggies


Couscous - Lentils, Couscous, Lemon juice, Olive oil, Pine nuts, Sliced almonds, Black pepper, Italian seasoning, Cilantro

Veggies - Broccoli, Zucchini, Squash, Purple yam, Olive oil, Coconut oil, Sea salt, Dill, Vegetable seasoning

Cooking Instructions:

  1. Cook couscous (1:1 with water)

  2. Cook lentils (don't overcook!)

  3. While couscous is still warm, combine all ingredients and mix well.

  4. Steam broccoli and drizzle some olive oil on them.

  5. Bake zucchini with some olive oil, sea salt and dill (160 C for 10-15 mins)

  6. Bake squash with some coconut oil (180 C for 30 mins or until soft)

  7. Bake purple yam with some olive oil, sea salt and vegetable seasoning (180 C for 30 mins)

  8. Arrange everything on a plate and serve.
